Pizza

I don't know that I've mentioned it before, but Fiance and I try to keep our meals and snacks low carb, because of how we don't want diabetes. But there are some things you just can't achieve without bread. And while there are a lot of recipes for some of those things using alternative flours (like almond or coconut), they don't always turn out well. Pizza is something you just cant have without a crust, so we've tried many variations to see if we can get the carb levels down. We made Pepperoni Pizza Pita Pockets, with low carb pitas, and that was pretty good, but kind of messy. We also tried an almond flour crust. It tasted like a pancake, and coconut flour would be worse in that regard (but hooray new low carb pancake idea!). Finally, we found this:

That, my friends, is a cheese crust. Not a cheese stuffed crust, but a crust made of cheese. You mix your choice of cheeses (this one is mostly cheddar) together with 3 eggs and bake, flipping halfway through to evenly brown. It's basically a super thin, super cheesy quiche, on top of which you construct a pizza.

It was super delicious. I'm never the person to turn away an opportunity for more cheese. We decided we'll alter the recipe by adding parmesan so the crust gets a little crisper (although this version was very firm and easy to pick up like a normal pizza) and also use one less egg to reduce the slight egg taste. All in all, it was a huge success, This is our new go-to, low carb pizza!
